TANGIA EXPERIENCE

#‎food‬ _TANGIA EXPERIENCE We are those lucky girls who staying only few days in Marrakesh had an amazing chance to participate in preparing Tangia. Participating and not preparing because it is a dish that is made only by men. Tangia is an urn-shaped vessel in which stew is made. Our friend got the pot, we went to buy 2,5 kilo of lamb, moroccan spices, butter, salted lemons and garlic. He put everything in the pot and we went to a place where Tangia has to cook for at least 4 hours. It is an underground room next to hammam where men were throwing wood in a huge oven to keep up the hammam warm. So the pots were staying in the hot ashes of that wood and slowly cooking. How amazing that is! After a long day we came back to pick the pot at night and I couldn’t wait have our special dinner. Meat was so tender and there is no words to describe richness of the taste. Thank you Khalid for this very special experience, without you it would be only a story from the travel cook-books. Tangia eating ceremony was beautifully ended with sweet mint tea called “Moroccan Whisky” on the roof top when the full moon was shining as bright as the sun.
