Homemade Banana Granola

Today I decided to spoil my dear colleagues and I brought to the office fresh granola I have made last night.

Rich and nutritious food in the morning is essential for our body and soul.

Sweet ripe bananas baked with oats and complemented with roasted nuts and coconut flakes have aroma of comfort and happiness.

Here is the recipe! Feel free to improvise and play with the proportions :)

3 ripe bananas

3 madjoul dates

70g (1/4 cup) maple syrup

1tsp Vanila extract

100g cocnut oil

300 g oatmeal

+coconut flakes, rasins, roasted walnuts, almond flakes and pumpkin seeds

*Preheat oven to 180 C

*Mix in the food processor bananas, dates, coconut oil, maple syrup and vanilia

*In a big bowl pour the banana puree over the oatmeal and mix it properly

*Spread the mixture on the tray and let it bake for 20 min

*Devide mixtute on the tray in 4 pieces and flip it over. Repeat this step by making pieces smaller and smaller every 5-7 min for another 30 min.

*When the granola changes the color into golden brown but it is time to take it out from the oven.

*Granola will be still soft until completely cools down. ENJOY!
